Veggie Soup recipe

A delicious hearty Veggie soup made with dry Soup mix, which includes Lentils, Peas & Barley.

2 tablespoons Butter or Olive oil

1 stalk Celery (optional)

1 big Onion 2 to 3 Garlic Cloves

2 to 3 teaspoons Spices (try Pure Spice BBQ, Thai spice, Portuguese Chicken or BBQ Chicken Spice)

4 carrots – finely chopped

3 to 4 potatoes – finely chopped

1 cup dry uncooked Soup Mix

1 tablespoon Apple Cider Vinegar or Lemon Juice

6 cups Boiling water

4 to 5 chopped Tomatoes or 400g Tin

A handful of Chopped Spinach

1 heaped tsp Brown Rice Flour or normal Wheat Flour

Salt & Pepper to taste

Simmer Onion & Garlic until soft. Stir in the spices and then add all the vegetables, Water & Vinegar / Lemon Juice. Cover with a lid and simmer for 30 to 40 minutes until soft. Once its soft, add the Spinach and the Flour, and stir until thickened. Season with Salt & Pepper to taste
